So, I finally got back on track to do some baking over the weekend. For me creating healthy bakes while sipping a mug of coffee with the radio on is an hour of zen. And of course, enjoying the results from baking is the cherry on top!

When I research healthy baking recipes I can be put off by the complex and sometimes expensive ingredient list. But I found the perfect recipe from the Natural Born Feeder as it’s simple and cheap to create. Not to mention, you probably would find most of these ingredients in your cupboard already (winning!). So without further ado…

Ingredients

150g porridge oats

3 tbsp. honey

4 tbsp. smooth peanut butter

2 tsp vanilla extract

8 tbsp. milk

Pinch sea salt (optional)

 

Topping

50g dark chocolate to drizzle

 

Method

Preheat the oven to 200°C.

Combine the cookie base ingredients into a dough texture.

Spoon 1 tbsp. sections of the dough mixture onto a baking tray lined with grease-proof paper.

Press down each cookie to roughly 3cm in height and shape on the baking tray.

Bake for 15-20 minutes.

Drizzle the cookie with melted dark chocolate.

Enjoy with a cup of coffee  and relax!
