Sweet potatoes are not only delicious but a high-fibre food. Fibre helps you feel fuller for longer, preventing you from reaching the crisp drawer later on! These sweet potato halves are not only simple to create, yet full of flavour. Enjoy with friends and family either as a starter or snack.


1 large sweet potato sliced 1cm thick
1 ripe avocado
2 tbsp. pesto
8 sundried tomatoes


– Preheat oven at 220°C.
– Slice the sweet potato and bake for 20 minutes or until tender and crispy along the edges.
– Prepare the avocado by removing the skin and stone, then mash with a fork.
– Load up the sweet potato with a dollop of avocado, pesto and a sundried tomato.

Tip: Alternate toppings such as Parma ham and watercress.
